CHOCOLATE COCA COLA CAKE

ImageThis cake demonstrates the power of Twitter because I asked if anyone had a recipe for a Chocolate fudge cake that was not too bitter and this recipe is what everyone came up with. I made it and it was loved by my 23 year old birthday daughter & all her siblings and friends!! In case you want the original it is a Sue Lawrence recipe.

Really moist & chocolate fudge icing was the best I have ever made so it must have been the Coca-Cola!

Ingredients:

250g self raising flour

3 heaped tablespoons cocoa powder

1/4 tspn bicarb soda

280g golden caster sugar

250g butter

250ml Coca-Cola

100ml milk

2 eggs

1 tspn vanilla extract

 

Icing:

150g butter

50ml Coca-Cola

3 heaped tablespoons cocoa powder

400g icing sugar

Preheat oven to 180 degs C & prepare 24cm springform cake tin lined with baking paper

Sift flour, cocoa & bicarb into large bowl. Slowly melt butter, sugar & cola in saucepan then slowly add this to dry ingredients along with milk, whisked eggs & vanilla, stirring all the time. Once thoroughly but gently combined, pour mixture (which will be very liquid but don’t worry) into the prepared tin and bake for about 40 mins or until a skewer comes out clean. Leave in tin on wire rack for about 10 mins, then remove from tin. Allow to cool completely.

To make the icing: melt butter along with cola and cocoa in saucepan. Pour this mixture into the icing sugar and beat until smooth. Ice the cooled cake and decorate.

  2. wish it wasn’t so late as I want to make it now. Going to set on to bake it first thing in the morning. It sounds so good chances are it will all be gone by supper time . It may be a statement cake to give to guests staying with us at http://www.carrhousefarm.co.uk

The Other Half (OH) is very tolerant, has a good sense of humour and goes along with most of my plans. Love to cook if someone else would do the shopping and even the choosing of the menu; love to read (more recently on a Kindle) but still struggle to find the time and more often than not am asleep after 5 minutes. Love to walk with the dogs and any members of my family who are out of bed, though 3 prolapsed discs are trying to stop me (never been good at being told 'No') and so doing lots of Pilates to compensate! I blog to make myself laugh at life's little hiccoughs. My motto is "try and turn a lemon into a melon"!!
