Optimistically planning a beach barbecue for Sunday (will take jerseys andWindproof TurboFlame Lighter in case). Would have loved to have simply slapped a few sirloin steaks on the portable Weber, but decided to try and come up with something more interesting for our guests. Decided variety was the spice of life in the hope that everyone will find at least one dish to their taste.
BAGUETTE – slice, smear with garlic butter and griddle.
BUTTERNUT SQUASH – blanch wedges 2-3 mins, dry. Brush with chilli oil and grill 3 mins per side.
RED ONIONS- skewer chunks, drizzle balasamic
STUFFED BABY SQUID- mix cooked sushi rice with mirin, prawns, wasabi. Squeeze lime juice once cooked.
BEEF & CHORIZO MEATBALLS – combine mince, onion, garlic, paprika, half beaten egg to form balls. Skewer, alternating with chorizo slices.
HALLOUMI KEBABS- thread courgette, cubed cheese, cherry toms onto skewers.
ALKA SELTZER – one per person.
